In , businessman Michael Bruser established a new style of steak house in downtown Vancouver on Alberni Street. That kind of preparation is common at food fairs the world over today. But when Kobe and the Benihana chain in the United States brought the cooking style to our shores, it was something new. Adapting a standard Western steak house menu of beef, shrimp, lobster, chicken and assorted veggies with some Japanese flourishes such as mung bean sprouts, teriyaki sauce and the eponymous legendary Kobe beef, the Japanese Steakhouse emphasized the dining experience.
They perform it. From flaming onion volcanoes to shrimp tails flying into apron pockets, spinning eggs cracked in half on spatulas and grand flips of a lemon onto a knife edge, this is culinary theatre. A strobe light built into every grill hood even makes the seasoning salt sprinkled onto your veggies twinkle and shine. The first thing you discover on walking into the restaurant is that the main floor houses a classic bar, with comfortable little booths, dim lighting, no loud music and one TV in the back.

Two family groups were celebrating birthdays, an office function had the back, a large group of old friends another. The place was hopping for a Tuesday night. All dinners come with a bowl of rice, appetizer shrimp, a shabu-shabu soup, garden vegetable medley and a green tea at the end. You also get a serving of the house special mustard and ginger sauces. Both were developed by the first head chef and are popular enough that they are sold in bulk if you want to take some home.
The ginger sauce is a bit thin on flavour and could use some bumping up. The mustard sauce, with its hit of horseradish, is really very good. From there, your decision comes down to the cut of meat and a few extras. There are limited appetizers, because this place is about the meat. Plus, you really do get the full meal with all the included standard dinner items. Kobe Japanese Steakhouse first course arrives while shrimp sear in the distance. It got things warmed up as we watched the chef prepare our garden veggies with flash cutting, spatula acrobatics and sleight-of-hand moves with the seasonings.
The veggies arrived with the right warm juiciness and inside crunch and respect for their natural flavours. The teppan shrimp appetizer was far more fun to watch being cooked than to eat, rather bland and a touch more cooked than I wanted it.
